Chicken Club Tacos
1 piece cooked bacon, crumbled
1 packet of taco seasoning
1 Mexican flavored grilled chicken breast, sliced
lettuce, sliced thinly
Mexican cheese blend, shredded
small flour tortillas
small can chipotle peppers in adobe sauce
Make the Chicken
Use about a palm full of the taco seasoning as a dry rub on both sides of the chicken breast.
Cook on the George Foreman indoor grill until done.
Set aside and slice thinly fajita style.
Build the Tacos
Warm the flour tortillas in the microwave to soften.
Build the tacos with lettuce, tomatoes, chicken, bacon and cheese.
Make the sauce
Take about half of a cup of bottled ranch dressing and add 1 or 2 tablespoons of the adobo sauce to taste.
One chicken breast should yield 3 or 4 tacos depending on the size of the tortillas.
